Harvest Notes

2016 was an exceptionally dry year resulting in a low yield of unusually small grapes with intense flavours and fresh acidity.

Vinification

Carignan grapes were hand-harvested on the 24th September into 15 kg boxes. They were de-stemmed and crushed to liberate the juice before fermentation. Extraction was achieved by punching down twice a day in the early stages of fermentation, one rack and return and then macerating on skins until pressing on the 12th October.

Malolactic fermentation: Spontaneous MLF.

Maturation

40% of the wine was matured in two and three year old barriques for 12 months before blending and bottling in March 2018.

Oak influence: 40% matured in 2 to 3 year old French oak barriques.
