Vineyard: Avaux

Avaux is located on the southern side of the Beaune appellation. This parcel sits just at the back of the Clos des Avaux.

Yield: 25hl/ha hl/ha

Soil Type

Calcareous-clay.

Harvest Notes

Fruit was hand harvested into small 12 kg picking cases. The fruit then passed over the sorting table to ensure the removal of any unwanted fruit, insects and leaves. The wine is 100% de-stemmed. Fermentation in stainless steel. Several days pre fermentation soak. Once fermentation started there were several punch downs which involved us getting into the tank to very gently mix the fruit.

Malolactic fermentation: Yes. Occurs naturally in the barrels during the aging process in the cellar.

12 months in French oak. 1 new barrel out of 4.
