Vinification
Hand picked and sorted. 20% whole bunch, 3-4 punch downs.
Malolactic fermentation: Yes, conducted in barrel during cellar ageing.
Maturation
10 months in barrel then one month in tank and bottled January 2022.
Oak influence: No new oak. Aged in older French barriques.
