Vinification
Open fermenation in concrete vats for 4+ weeks, manual punchdowns and pumpovers, inclusion of whole clusters, gentle pressing, barrel storage for 15 months in a selection of new (20%) and used barrels of French origin, tight grain, low toast, no filtration.
Malolactic fermentation: Spontaneous malolactic in barrel.
Maturation
12 months.
Oak influence: The oak flavour is very subtle while the tight grain oak integrates the fruit with the wine tannins very well.
