Description
Pale pink in colour with lifted aromas of strawberry, rhubarb, pink pickled ginger and hints of rose petals. On the palate the wine is more savoury, with crunchy rhubarb and salted plum flavours, firm tannin structure and tangy acid length. Terrific with salmon and tuna sashimi, or a lovely charcuterie platter.

Vineyard
Cool maritime climate. On the edge of volcanic, southern, higher part of Mornington Peninsula (approx 150 m above sea level). North facing vineyard.
Yield: 35 hl/ha
Soil Type
Volcanic soil.
Vinification
Hand harvested. Destemmed and fermented on skins (19 days total). Pressed to barrel (2-3 year old French oak). Natural MIF in barrel in spring. 10 months in wood on lees with 1 racking prior to bottling. Unfined and unfiltered.
Malolactic fermentation: Yes, wine left unsulphured after primary fermentation for 8 months to allow natural MLF to take place in its own time.
Maturation
Oak influence: Old oak allows the wine to breath and develop over the 10 months of barrel maturation.
