Vineyard: Blanches Fleurs
South-east facing Premier Cru vineyard situated in the appellation of Beaune. Soils are composed of sandy clay and limestone.

Vinification
Grapes were hand picked and sorted. 20% whole bunch and 80% de-stemmed. Fermentation started spontaneously after three days in an open concrete tank. A combination of gentle pump overs and delicate foot punch downs was tailored to carefully extract tannins. Fermentation lasted two weeks and post fermentation maceration lasted 2 days. The free run and press wines (gentle vertical basket press) were combined in a stainless-steel tank before being run off by gravity into a mix of 2nd, 3rd and 4th fill French oak 228 ltr barrels, no new oak was used, barrels used were from a mix of different coopers. The wine started malolactic fermentation spontaneously in barrel the following summer and was aged in barrel for a period of 22 months in total.
