Jerez climate: cooling winds come from the west - called poniente - although there is also a warm, drying wind from the east - levante - that can occasionally hit the region.
Approximately 70 days of rain between October and May (an average of 600 mm) and approximately 300 days of sun per annum. Summers are arid and hot, with temperatures reaching 40 degrees Celsius. Throughout the year, the average temperature is around 18 degrees Celsius.

Soil Type
Albariza soil - chalky, porous, limestone-rich soil of brilliant white colour.
Vinification
Following fermentation, the wine is fortified to 22% alcohol, aged as a vintage and remains in cask until bottling without filtration or clarification. Limited production especially for the IMW.
Maturation
Oak influence: Notes of vanilla.
