Harvest Notes
Hand harvested at 13.5 baumé with vibrant red berry flavours and good natural acidity.
Vinification
The fruit was destemmed with the inclusion of up to 25% whole-bunch clusters into a selection of small 2 tonne fermenters. After a brief cold-soak period, the fruit was allowed to warm naturally to start fermentation. Both hand and foot plunged daily, helped to manage the temperature exchange and the overall extraction.
Maturation
Limited maturation designed to showcase primary fruit characters and youthful vibrancy of the Grenache.
