De-stemmed fruit was cold soaked and plunged twice a day just to wet cap. A fusion of traditional techniques and modern winemaking concepts were used. Barrel fermentation and varbonic maceration are both methods included in this blend to add complexity. Bright ruby beautifully fragrant red currants and raspberry, great vinosity and lift, stalky and smoky earthy spice add complexity to the mid palate.
